Making great desserts with the kids is a great way to bond and teach them about the kitchen. The best part is that you’ll have sweet treats for everybody to enjoy together. This simple frozen chocolate sandwiches recipe is so easy that you could almost do it blindfolded. You can put together some great ingredients you probably have at home but also aren’t hard to find in the shop. Enjoy making them with your family before your guests arrive this weekend.

South Africans rarely just eat Tennis Biscuits as they are because they make such a great dessert crust. You can use your favourite ice cream and make it any flavour you think will go well with white and dark chocolate toppings. However, you can also make your own ice cream if you’re feeling adventurous. You can also decorate your fun ice cream sandwiches like you want to. They’re great for birthdays or a simple dessert with your family.

Prep time




  • ten packet ten Tennis Biscuits

  • 1 cup 1 whipped cream

  • 100 ml 100 caramel

  • 1 cup 1 chocolate mousse

  • 1 cup 1 soft ice cream

  • 100 ml 100 melted white chocolate

  • 100 ml 100 melted dark chocolate


  • Mix the cream and caramel together.
  • Using the biscuits to make a sandwich, make a layer of cream caramel, then a layer of chocolate mousse and ice cream. Place another biscuit on top. Place upright in a bread baking tin. Repeat until all the biscuits are used. Place in the freezer.
  • Pour the white chocolate in a bowl. Then, pour the dark chocolate in the center of the white chocolate. Do not mix.
  • Remove the sandwiches from the freezer. Dip each side in the chocolate, creating a marble pattern. Place on a dripping tray. As soon as the chocolate sets, place back in the freezer.
  • Serve with fresh strawberries and cherries.
