You’ve got plans to make for Father’s Day coming up and we want to help you sort out the food for the day. Every dad loves a hearty breakfast and we have something special for you. This fried banana pancake breakfast is filled with those familiar breakfast goodies with a dash of love and effort. You’ll be hearing that classic Jack Johnson song of the same name with every bite along with dad on Sunday morning.

Fried banana pancake breakfast suggestions

These pancakes are what we call flapjacks in South Africa. They are doughy and fluffy and our recipe is light too. The fried bananas caramelise nicely in a pan and like a pinch of cinnamon and maybe a chilli flake if dad loves spicy food. You can also add bacon which we highly suggest because of course, bacon and banana roll off the tongue so nicely, so why not eat it anyway? Go crazy and stack them as high as you can for dad as the first gift of the day.

Ingredients

  • 210 g 210 cake flour

  • 2 tbsp 2 baking powder

  • ¼ tsp ¼ salt

  • 50 g 50 sugar

  • 2 2 eggs, beaten

  • 1 cup 1 milk

  • 2 tbsp 2 butter, melted

  • 2 2 bananas, sliced

  • oil for frying

  • 80 g 80 maple syrup

Method

  • Mix the dry ingredients. In a separate bowl mix the eggs, milk and butter.
  • Add the dry ingredients to the wet ingredients while whisking.
  • Heat and drizzle oil in a pan over low to medium heat. Fry the flapjacks, flip and fry until golden on both sides. Peel bananas and cut them in half each.
  • In the same pan add a drizzle of oil, and add the bananas and fry. Add a maple of syrup and fry to caramelise for a few minutes.
  • Serve the flapjacks with the fried banana with some berries if using.
