Do you like a light meal in the middle of the day that provides all of your nutrition but also doesn’t fill you up too much? Salads are a great way to get all of the vitamins and minerals you need while still enjoying the taste. Our fresh broccoli and pepper salad is very light and so quick to make that you’ll be having lunch in no time. It’s the perfect meal during weekday lunches and if you’re looking after your weight, it’s even better.

Broccoli, the greenest leafy veg with all of the iron, calcium, folate and vitamin K helps with keeping you healthy during the winter. The green, red and yellow capsicum peppers add even more Vitamin A. You are very welcome to add some protein like chicken breast to this tasty salad if it’s needed. You can bring the best with avocado, mushrooms and even some jalapeno peppers for another kick.

Ingredients

  • 1 punnet broccoli cut into pieces

  • ½ cup onion slices

  • 4 tbsp sunflower seeds

  • 4 tbsp goji seeds

  • 4 tbsp chia seeds

  • 1 cup mayonnaise

  • 1 red pepper, sliced

  • 1 yellow pepper, sliced

  • 1 green pepper, sliced

  • ½ tsp salt & pepper

  • 1 carrot, grated

Method

  • In a bowl mix broccoli, red onions carrots, peppers and mayonnaise add seasoning and seeds mix well and serve.
