French onion soup: A famous soup recipe that you can make at home

Winter is the time for soup and there are countless options. There are some really simple soup recipes and French onion soup is one of them. It’s a very old recipe and it received a new life in the late 1900s as people realized how amazing French cuisine can be. The soup is very simple to make and can be enjoyed as a starter or main meal with your friends and family. It’s caramelised onion soup with cheese, so what’s not to love?

French onion soup tips

The recipe for this onion soup is very simple and your only real choice is to choose your cheese. Provolone ismild but rich with the best cheese pull-ness. Gruyere is a little nutty and earthy in flavor. Fontina is a mild white cheese that melts well. If you want to use mozzarella, don’t use fresh, full-moisture, cheese because it becomes watery instead of pull-apart and delicious. If you have oven-proof bowls, pop them under the grill with the cheese for a few minutes.

Ingredients

  • 10 large onions

  • ½ cup sherry

  • 2 large potatoes

  • 1 tbsp butter or olive oil

  • 1 beef stock cube (or cup of beef stock)

  • 1 cup cheese, grated

  • 2 tbsp flour

  • 3 litres hot water

Method

  • Chip onions and saute in the oil or butter until soft.
  • Remove excess oil and add the flour, whisking or stirring continuously.
  • Add the stock cube diluted in 3 litres of boiling water and potatoes.
  • Allow soup to simmer for at least one hour.
  • Before serving, add sherry and serve with grated cheese.
  • Optional: Put the bowls of soup in the oven to melt and bake the cheese.
