There are numerous variations of chocolate brownies out there, some with chocolate chips, some with nuts, and there is even a pumpkin cheesecake version. However, for most, the plain chocolate brownie with chocolate topping is the best.

The brownie can be enjoyed as a dessert together with cream, custard, ice cream or simply enjoyed as cake or biscuits would with a cup of tea. This recipe is plain and simple, and always delicious however it is served.

The recipe is quite easy and quick to make, as the brownies are ready within an hour.

Chocolate brownies can also vary in texture, some can be crunchy, like fudge, or soft and gooey. This recipe has a cake-like texture.

Amazing chocolate brownie recipe the whole family will love


  • 2 cups flour

  • 2 cups sugar

  • 250 g butter

  • 1/2 cup oil

  • 1 cup water

  • 1/4 cup cocoa

  • 2 eggs (slightly beaten)

  • 1/2 cup buttermilk

  • 1 teaspoon bicarbonate of soda

  • 1 teaspoon vanilla essence

  • Topping
  • 2 tablespoons cocoa

  • 2 tablespoons buttermilk

  • 1 teaspoon vanilla essence

  • 500 g Icing sugar


  • Preheat your oven to 200°C.
  • Mix the dry ingredients in a large mixing bowl and form a crater in the middle.
  • Place the butter, oil, water, and cocoa in a pot and bring to the boil. Remove from heat and pour over the dry ingredients.
  • Add the eggs, buttermilk, bicarb and vanilla essence and blend into the cake mixture by hand until all the ingredients have been thoroughly mixed in.
  • Prepare a square baking tin by greasing it or by using a cooking spray. The size of the baking tin depends on the depth you would like the cake to be. If you use a 28cm x 38 cm tin, your brownies should come out about 2.5cm high. If you use a smaller tin, then the brownies should come out taller.
  • Pour your mixed batter into the baking tin making sure it covers the whole surface of the tin.
  • Pop into the oven and bake for 20 minutes at 200°C.
  • Prepare the topping by heating all of the topping ingredients on the stove, except the icing sugar. Slowly add the icing sugar about 100g at a time. Continue with this until all the icing sugar has been added. It should have a pouring constituency.
  • Pour the heated topping over the brownies while they are still hot and ensure the topping covers the whole surface.
  • Let the cake cool then cut to the size you want. 30 x 30 mm squares you should get around 30 brownies.
