When you get home after a long day at work, you don’t want to spend too much time cooking dinner before watching your faourite shows. However, you also want to cook something that is healthy and delicious at the same time. Get those classic South African flavours when you make this healthy boerewors and vegetables dish. Ready in under 30-minutes, this simple meal is great for individuals or families during the week.

Healthy boerewors and vegetables tips

Even though this recipe only includes cabbage and carrots in the recipe, you’re welcome to add other vegetables like green peppers, beans or spinach leaves. You can also add a tin of chopped tomatoes instead of stock to make a hearty sauce. Using your favourite boerewors is essential when you want the best results and you can even make your own boerewors, even if it’s venison, which can add even more tasty elements to your meal.

Healthy boerewors and vegetables recipe

We get excited when someone says braai and wors is one of the reasons why.

Ingredients

  • 1 small 1 cabbage, shredded

  • 600 g 600 boerewors

  • 4 4 carrots, peeled and diced

  • 1 tsp 1 herbs

  • 1⁄2 cup 1⁄2 stock

Method

  • Place your frying pan on a medium heat and add the boerewors, keeping it in its spiral shape if you can. This shape helps to keep the juiciness contained within the sausage for longer, and gives the right spacing for the vegetables. The key to a truly flavourful and moist boerewors lies in the cooking temperature. Use a low to medium heat when you cook boerewors, as this cooks it evenly inside and out. Be sure to turn frequently.
  • When it is nicely browned on both sides, add the carrots and allow to simmer for a few minutes.
  • Add the shredded cabbage in layers on top of the boerewors, adding mixed herbs as you go along,
  • Add half a cup of water or stock to the pan, cover with a lid and simmer on low heat for about 30 minutes until carrots are tender.
