You always see flapjack pancake stacks in movies and cartoons. Now, in South Africa, you don’t see too many of these stacks very often and we want to change that. Do you want some indulgence for breakfast this weekend? Are you planning a big brunch get-together? These Fluffy Flapjacks are exactly what you need.
These Fluffy Flapjacks are so easy to make and come out perfect every time. It’s all about mixing the ingredients together and stacking them high. Fluffy Flapjacks are exactly what you come to expect from the name and they are super light too.
The great thing about flapjacks is the topping options. You can go with sweet toppings like honey, syrup, fruit and cream or even Nutella with cream. Or, go savoury with bacon bits or bacon and some scrambled eggs. How about the full American and go bacon, butter and maple syrup. There are countless ways to enjoy these pancakes.

Fluffy Flapjacks Recipe

3 eggs
125 ml sugar
250 ml milk
2 tbsp melted butter
2 cups flour
4 tsp baking powder
1/2 tsp salt
50 ml cooking oil
Method
- Beat the eggs and sugar. Drizzle the melted butter into the mixture. Mix the dry ingredients gradually with the milk. Do not over mix.
- Heat a frying pan on medium-low heat, to prevent flapjacks from getting overly brown. Add a tablespoon of oil.
- Pour heaped spoonfuls of the dough into the hot pan. Not more than 4 at a time. When the flapjack forms a bubble and pops, turn them over.
- Served the flapjacks with butter, syrup, honey, bacon, berries or cheese.
