There are few cuts of beef as sought-after as the fillet. It’s lean, tender and has some of the best taste. However, we can often over-think how to cook it the right way but it’s very simple. Our fillet steak and mushrooms also comes with a homemade monkey gland-style sauce. The fillet will be tender and juicy while the sauce provides some seasoning and tang to the dish. It’s a great dinner party meal that will impress your friends and family.

Fillet steak and mushrooms suggestions

The sauce is best made the night before so that the flavours can mature, perfect for your matured cut of beef. You want to find the best quality fillet for this dish to go along with the simple extras. When cutting medallions, make sure to cut across the grain so the steak is tender with every bite. In a smoking hot pan, the steaks should take no more than 3-4 minutes a side and is best at medium rare. They will cook a bit longer as you cover them in your homemade sauce.

Ingredients

  • 1 fillet fillet steak

  • For the sauce
  • 6 T tomato sauce

  • 6 T olive oil

  • 1 T Worcestershire Sauce

  • 1 clove crushed garlic

  • 6  T  chutney

  • 3 T vinegar

  • 1 T finely chopped onion

  • salt and pepper

  • Garnish
  • 25 g mushrooms

  • 2 tbsp lemon juice

  • 1 tbsp butter

Method

  • For the sauce
  • Mix the above together and simmer at a medium heat for about 20 minutes, stirring well. It’s done when it coats the back of the spoon without dripping too much.
  • This sauce can be prepared in
    the morning or before and kept in the refrigerator.
  • Grilling
  • Butterfly or cut medallions from the fillet across the grain.
  • Brown the steaks on each side in a very hot pan or on the grill for a few minutes. Don’t take it past medium rare as the steak will continue cooking on its own. .
  • Garnish with mushrooms fried with butter and 2 tablespoons of lemon juice.
