If you like making quick and healthy meals during the week, wraps are often a good way to go. You can fill them up with your choice of protein and vegetables to get all of the nutrients you need. If you do weekend meal preparation for the rest of the week, you can prepare a whole lot of ingredients that you can just add and take five minutes to put together. That’s why you should try these homemade perinaise chicken wraps.

Homemade perinaise chicken wraps

You don’t have to make everything yourself and that’s going to be true for your favourite hot sauce. You can use your favourite Nando’s sauce or whichever you prefer. Use a spicier version because sometimes mayonnaise can dampen the heat of hot sauce. You can include your favourite vegetables into this meal so that you can keep it healthy. The roti recipe is easy to put together and they store really well in the fridge.

Homemade perinaise chicken wraps recipe

To make the wrap, you can use store-bought tortillas, wraps or homemade Roti, a flatbread which is a staple in many Indian homes.

Ingredients

  • 4 4 chicken fillets

  • 2 tbsp 2 Nando’s peri-peri sauce (choose the heat you can handle)

  • 2 tbsp 2 mayonnaise

  • 1 tbsp 1 masala

  • salt

  • minced ginger and garlic

  • 50 ml 50 soy sauce

  • mixed herbs

  • lettuce

  • For the rotis
  • 2 cups 2 flour

  • 30 ml 30 oil

  • 1⁄2 tsp 1⁄2 salt

  • 1 cup 1 boiled water

Method

  • After the chicken has been defrosted, cut up in cubes and rinse.
  • Add 1 tablespoon of masala. This may vary according to your taste but you do not want to overpower your peri-peri sauce. Add salt to taste.
  • Add a few drops of soy sauce and half a teaspoon of ginger and garlic mix.
  • Pour in about half a bottle of peri-peri sauce.
  • Add about 2 tablespoons of mayonnaise.
  • Cook on medium heat for about 15 minutes. Do not let the heat dry the sauce.
  • Add lettuce and any other garnish you like to the wrap, you may want to add green peppers, tomatoes, grated cheese and other fillings. Place chicken in a line down the centre of the wrap and fold over into a tube.
  • To make the Rotis:
  • Sift flour and add salt.
  • Mix a cup of boiled water with the oil.
  • Pour water and oil into the flour to form a soft dough. You may add more water if you think it is necessary.
  • Knead well to create a soft, lump free dough. It should not be sitcky.
  • Separate the dough to form balls.
  • Flatten each ball between your palms.
  • Roll these out until flat and round. Make sure you add flour onto your rolling board to ensure the dough does not stick.
  • Grease a non-stick pan with butter and when hot fry each roti for about a minute.
  • This should make about 12 rotis.
