There are few family meals as good as a classic pasta recipe. Sometimes, pasta can take a while to make with recipes like bolognese but recipes like our Creamy Pasta Alfredo takes next to no time at all. Alfredo is a creamy pasta made with cream, black pepper and often includes some ham too. When you’ve had a hard week at work, you don’t want to cook for a long time and this recipe will become a lifesaver.

When you’ve made your pasta, never discard all of the pasta water and save about half a cup. When mixing the pasta into your pre-made sauce, add a small amount of the pasta water which will thicken and bind the sauce even more. You can add some high-quality ham bits or even bacon to your pasta if you want to. It’s a basic pasta platform to do with what you want.

By adding mushrooms, spring onions and garlic, this dish of pasta alfredo will be a family favourite.

Ingredients

  • 500 g cooked pasta of your choice

  • 250 ml cream

  • 150 ml parmesan cheese

  • 20 ml butter

  • 100 g sliced mushrooms

  • 1 clove fresh garlic, crushed

  • salt

  • pepper

  • chopped parsley

Method

  • In a saucepan, heat the butter on medium heat. Add the mushrooms and garlic. Add the cream. Stir the mixture constantly to prevent burning. Add the parmesan cheese. Stir the mixture gently. This will thicken the sauce. Season with salt and pepper.
  • Pour the sauce over the cooked pasta, then add the parsley.
  • After dishing the pasta, sprinkle with parmesan cheese. Top with more parsley and serve.
