Did you know that you can have some great ribs for dinner this week and not just on the weekend from the braai? The oven is often even more perfect to make some ribs because they can just roast while you make sides and get ready for a feast. These sticky lamb ribs are juicy and tender while being simple to prepare for your family. They’re a great combination of sweet and spicy which will dance on the taste buds as you dig in.

Sticky lamb ribs suggestions

To improve cooking time, ask your butcher to chop these ribs up for you instead of roasting them as a rack. If you’re using a deep roasting pan, just add some vegetables like onions, carrots, butternut, and green beans into the bottom before putting the ribs on a rack over the top. Another great side with some sticky ribs are crispy roasted potatoes, mashed potatoes and corn on the cob. They’re ready in an hour, so they’re great for any day of the week.

These sticky lamb ribs will have you wanting more! They are what one would describe as finger licking good. So, what are you waiting for?

Ingredients

  • 1 kg 1 Lamb Rib (ask your butcher to cut the ribs, it is much easier and quicker to cook)

  • 1 can 1 peaches in natural juice

  • For the sticky glaze
  • 125 ml 125 Worcestershire Sauce

  • 2-4 cloves 2-4 garlic, crushed

  • 250 ml 250 tomato puree, not tomato sauce, as the puree contains less sugar

  • 250 ml 250 chutney (light one if possible)

  • 60 ml 60 soy sauce

Method

  • Preheat the oven to 180°C and line a large baking sheet with tin foil.
  • Combine all the glaze ingredients and blend in a blender. Taste for seasoning and adjust. You want the glaze to be sweet and spicy but be balanced with salt (from the soy) and acid from the chutney.
  • Place the ribs on the prepared baking tray and spoon over the glaze. Make sure all the ribs are covered completely
  • Place the ribs in the oven and allow to bake for 45 minutes.
  • Turn up the heat to 200ºC for about 10 minutes to allow the ribs to caramelize.
  • Remove from the oven when the ribs are sticky and caramelized and serve.
