Elderflower fritters – Enjoy a unique bite flavoured with nature

Enjoy an unusual treat by whipping together these elderflower fritters. They are unique and surprisingly satisfying snacks.

Have you ever tried elderflower? It is the flower of a tree and its scientific name is sambucus. Interestingly, the raw flower is poisonous but when cooked it is safe to eat. An extract of this unique flower is used to make medicine for sinusitis, colds, flu, bronchitis, diabetes and even constipation. But for this recipe, we are not using it for its medicinal value.

Wondering what elderflower tastes like? It almost tastes like a pear but is more of a fragrance than a taste.  Preparing elderflower fritters are quick and easy. Simply prepare the batter and dip the elderflowers in the batter and fry each one for about two minutes until golden brown. Next, cut off the stem, place the elderflower fritters on a plate and sprinkle with icing sugar.

This unique treat will be a surprise to anyone you decide to serve it to. Enjoy!

  • 12 large 12 elderflowers, heads open

  • sunflower oil

  • 3 3 eggs

  • 3 tablespoons 3 sugar

  • 1 teaspoon 1 cinnamon

  • 1 cup 1 milk

  • 1 cup 1 cake flour

  • 1 cup 1 water

  • icing sugar for sprinkle


  • Mix the eggs, sugar and cinnamon.
  • Mix the flour, milk and water until it is a running batter.
  • Heat the oil in a large pan.
  • Hold every flower at its stem en dip the whole flower in the batter and put it in warm oil.
  • Let it fry for 2 minutes until golden brown.
  • Cut the stem off and place the flower on a plate and sprinkle with icing sugar.
  • Serve warm with cream.
