Is there a more iconic breakfast duo than eggs and toast? How about one fruit that has gained considerable love and admiration, the avocado. Our Eggy Avo Toast is the perfect way to start your day and light enough for a mid-afternoon snack.

Not only will you combine the avo, egg and toast, you’ll also perfectly poach an egg. Often, new home cooks find it a daunting task but the method you use in this recipe is easy and delicious. You can also adjust the timing of cooking your eggs to your preferred “done-ness”.

Eggy Avo Toast Recipe

Ingredients

  • 1 slice 1 Bread, whole-grain

  • 60 g 60 Avocado, sliced

  • 1 pinch 1 Pepper, black, ground

  • 1 pinch 1 salt

  • 1 medium 1 Egg

  • Baby spinach or rocket, to garnish

Method

  • Crack the egg into a bowl.
  • Bring a pan of water filled at least 10cm deep to a simmer. Don’t add any salt as this will break up the egg white.
  • Tip the egg into the pan. The yolk should follow the white.
  • Cook for 2 minutes then turn off the heat and leave the pan for 8-10 minutes.
  • Lift the egg out with a slotted spoon and drain it on kitchen paper.
  • Toast the bread.
  • Place the avocado on the toast and top with the poached egg. Garnish with salt and pepper, and baby spinach leaves or rocket.
