To make a great Mexican dish you all you need is a “base” such as a taco, tortilla or nachos chips; layered with meat, toppings and salsa. Serve with a portion of refried beans and sour cream on top and voila, tasty tex-mex at home.

Make your own taco spice for authenticity

If you really want to get the original flavours, try make your own taco seasoning.

Quick homemade taco seasoning makes a great addition to your Mexican dishes such as tacos, burritos or nachos. It is the perfect way to spice up your chicken, beef or seafood. Making your own seasoning is easier than you think.

With this recipe you don’t need to go to the store and buy the ready-made mix, which will save you time and money. It is also much healthier as there are no additional flavourants and colourants added.

The secret to any Mexican dish is the cumin, so if you find yourself without all the other spices, a long as you have cumin, salt and pepper you will still be able to make a great dish.

You can double the batch for the spice mix and store it in a jar for future use.

Ingredients – SEASONING

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 1 tablespoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon oregano

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • INGREDIENTS – TACO FILLING
  • 500 g beef mince (or you can use chicken breasts)

  • 1 onion, finely chopped

  • 2 garlic cloves, finely minced

  • 1 tablespoon taco seasoning mix

  • 1 tin tomato paste

  • 1/2 cup tomato sauce

  • 1 can corn, whole kernels

  • fresh coriander to garnish

  • INGREDIENTS – REFRIED BEANS
  • 1 can black beans or pinto beans

  • 1 garlic finely chopped

  • 1 tablespoon oil

  • 1 teaspoon cumin

  • juice of 1 lime

Method – SeaSONING

  • Combine all the ingredients and store in a jar.
  • METHOD – TACO FILLING
  • Fry the onion and the garlic until soft. 
  • Add mince and cook till brown. 
  • Add a tablespoon of taco seasoning and combine.
  • Add tomato paste and tomato sauce and simmer for 10 minutes.
  • Add corn and cook for further five minutes.
  • Layer your taco with a scoop of meat filling, fresh lettuce and grated cheese on top. Serve with re-fried beans, sour cream and tomato salsa.
  • METHOD – REFRIED BEANS
  • To make the refried beans, heat garlic in pan with oil. Add tin of beans and cumin and cook for five minutes.

  • Mash with potato masher or fork until soft. Squeeze lime juice over. Serve with tacos.
