The braai season is in full swing this festive season, not that we need a reason to light the fire. When we do, we are often surrounded by friends and family who are getting hungry, which gives you a chance of feeding them some great food. At a braai, the sides are often the heroes as everybody has their classics and one of them is pap en sous or maize meal and relish. Did you know there was an upgrade to this classic side? This maize meal bake or paptert is going to change your weekend braais forevermore.

Maize meal bake suggestions

If you know how to make “pap” you want to keep it in the middle of the texture everybody likes, a bit crumbly but a little bit soft too. Then, make your favourite tomato relish with onions, maybe a few peppers and some spice. Top it with cheese and bake it for a while. It’s also a fantastic base for a leftover meal the next day if anything was left over. Make the paptert and add some chopped up boerewors or steak into the relish mixture and enjoy the meal in a whole new way.

Ingredients

  • 2-3 cups 2-3 cooked maize meal

  • 1 cup 1 tomato relish

  • 1 cup 1 grated cheese

Method

  • In an ovenproof dish, roll the maize meal into 6 golf ball size balls. I use a ice cream scoop to get an even size.
  • Pour over the relish.
  • Sprinkle the cheese on top.
  • Bake in the oven at 180 degrees for 20 minutes. Alternatively, make in a freeze proof dish and freeze until needed.
