What is teatime without a biscuit or two to dip in your tea or coffee? This easy gingerbread cookies recipe will make you want to break for teatime a few times every day.

This old-fashioned ginger treat is spicy and sweet at the same time. These easy gingerbread cookies are also super addictive, so it is almost impossible to stop after tasting one.

The best part is that this recipe is incredibly easy to bake. Simply prepare the dough, use a cookie cutter or fancy shapes when cutting out the cookies and bake for 10 or 20 minutes. If you like your ginger cookies soft, 10 minutes will suffice, but if you like them crunchy, increase the baking time to 20 minutes.

Ginger is known to sooth stomach conditions, so if you feel nauseous, you can enjoy a gingerbread cookie to calm your stomach.

To make these easy gingerbread cookies popular among the younger generation, use icing to brighten them up. And if you have a little man cookie cutter, you can make little gingerbread men!

Store bought ginger biscuits are simply not as good as those freshly home baked goodies, so why not make them from scratch today?


  • 250 g margarine or butter

  • 6 cups flour

  • 2 cups brown sugar

  • 3 tablespoons ground ginger

  • 2 jumbo eggs

  • 1 cup golden syrup

  • 3 teaspoons bicarb mixed with 2 tablespoons milk

  • pinch of salt


  • Cream the margarine and sugar well for about ten minutes.
  • Add the eggs on at a time, mix after each egg.
  • Add the ginger and syrup with the bicarb-milk mixture and mix well.
  • Sift flour and salt together and add to the mixture.
  • Mix to a soft dough.
  • Make little balls, roll in sugar place in the prepared baking tray. Take the bottom of a glass dip in the sugar and flatten the balls and bake in the oven at 180°C for 10 minutes if you like them softer or 20 minutes if you like them crispy. Adjust the oven cooler if needed.
