Sitting in a fancy restaurant, you often get a basket of small slightly-warmed rolls which often fills you up before you actually start dinner. But, you’ve just planned your own fancy dinner, haven’t you? You need starters for arriving guests and some fresh homemade bread rolls with butter, cheese and preserves is always a winning combination. This recipe also gives you an opportunity to make larger rolls for burgers and lunch sandwiches.

Making homemade bread rolls

If you don’t want to be kneading for ages, using a stand-mixer with a hook attachment is the best way to develop gluten for light and fluffy bread. Baking is all about patience but it also gives you lots of time to prepare sides and other dishes that can be made ahead of time while you’re already in the kitchen. The dinner rolls will come out fluffy on the inside with a golden crust on the outside and are best enjoyed freshly baked.

Delightful mini bread rolls recipe.


  • 450 g 450 all-purpose flour

  • 7 ml 7 salt

  • 5 ml 5 sugar

  • 5 g 5 instant yeast

  • 10 g 10 butter

  • 250 ml 250 lukewarm water


  • Preheat the oven to 200°C.
  • In a mixing bowl combine flour, sugar and salt and add the instant yeast and stir with a whisk until combined.
  • Rub the butter into the flour and slowly add the water to form a soft dough. Knead well for approximately 10 minutes until it is smooth and elastic.
    If using a machine add all ingredients into your mixing bowl with the dough attachment and mix slowly until you see all the ingredients are combined. This prevents all the flour making a mess. Once combined, it is safe to put it on high.
  • Once all the ingredients have come together to form a dough, put your machine on high and allow to knead for 3-5 minutes until smooth and elastic.
  • Put the dough in an oiled bowl and cover. Allow to rise for 20 minutes or until double in size.
  • Flour your work surface and knock the dough down. Portion into 16 equal parts and gently roll into round balls.
  • Place on an oiled baking sheet and oil the top of the rolls. Allow rising for another 40 minutes until they have doubled in size.
  • Brush the top of the rolls with egg and milk.
  • Bake rolls for 10 to 15 minutes until golden brown.
