The sun is out and the days are slowly getting warmer here in South Africa. It’s time to start inviting your friends over for a braai. Other than incredible cuts of meat perfectly cooked over the coals, you have sides. Every family and group of friends has at least one person who makes great sides for a day in the sunshine. Become the king or queen of braai sides with this delightful beetroot salad.
Delightful beetroot salad
This recipe is different to the traditional shredded and pickled beetroot salad. This recipe is fresher and you still don’t drain the beetroot bulbs for that bright red colour and as much flavour as possible. The apples and pineapple shreds ads some sweetness and replaces the vinegar for that tangy goodness you remember. You can include some shredded onions to the mix and top it with feta cheese for texture and presentation.

6 medium 6 beetroots, washed
2 large 2 apples, grated
1 large 1 pineapple, grated
2 tbsp 2 mayonnaise
salt and pepper to taste
Method
- Do not bleed the beetroot bulbs.
- Place the washed bulbs into boiling water and boil until soft.
- Add the grated apple, pinapple, mayonnaise. Season with salt and pepper to taste.
