We’ve all gone into a bit of a baking phase, haven’t we? We keep trying new things and finding our favourites. One of our favourites here are muffins, especially chocolate muffins. They make even the oldest grown-ups feel like they are kids again eating sweet treats. We can also almost guarantee that you will be going back for more for a midnight snack with these Decadent Chocolate Muffins.

There isn’t much to baking muffins and this easy recipe is no different. It’s all about just adding all of the ingredients and baking them. Using muffin cups in your muffin pan is a great idea and we suggest spraying both with some Spray ‘n Cook. When serving, these Decadent Chocolate Muffins are perfect on their own, but when you add some butter and maybe some whipped cream, you have a really special dessert to serve to your friends and family. They make a great addition to any celebration or dessert.

This easy chocolate muffin recipe is incredibly moist and full of chocolate flavours. They make the delicious breakfast or afternoon snack.

Ingredients

  • 1 ½ cups 1 ½ flour

  • ½ cup ½ cocoa powder

  • 2/3 cup 2/3 sugar

  • 1 tbsp 1 baking powder

  • ¼ tsp ¼ salt

  • 1 1 large egg

  • 1 cup 1 milk

  • 1 tsp 1 vanilla extract

  • ½ cup ½ oil

  • 1 cup 1 chocolate chips, plus more for topping

Method

  • Preheat the oven to 220 degrees Celsius.
  • Line a muffin tray with muffin liners, or grease the muffin tray if you don’t have paper liners.
  • In a large mixing bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder and salt.
  • In a separate bowl whisk together the egg, milk, vanilla, and oil until well combined.
  • Pour the wet ingredients into the dry ingredients and until just combined. Do not over-mix your batter.
  • Fold in the chocolate chips.
  • Scoop the batter into your prepared tray.
  • Bake the muffins for 8 minutes at 220 degrees then lower the oven temperature to 175 degrees Celsius.
  • Bake until a toothpick comes out clean.
  • Remove from the oven and allow to cool.
