Date & Coconut Balls Recipe

Ingredients

  • 125 g 125 butter

  • ¼ cup ¼ sugar

  • 1 teaspoon 1 vanilla essence

  • ¼ teaspoon ¼ cinnamon

  • 250 g 250 dates, chopped

  • 1 1 egg, whisked

  • 1 packet 1 biscuits (Tennis or Marie biscuits work best), crushed

  • 100 g 100 coconut, for rolling

Method

  • In a small saucepan, melt the butter. Add the sugar and stir until the sugar has dissolved.
  • Add the vanilla essence, cinnamon and the dates and heat for five minutes until the dates are soft.
  • Take the mixture off the stove and transfer it to a large mixing bowl.
  • Add the whisked egg and mix well.
  • Add the biscuits and coat well with the mixture.
  • Put the mixture in the fridge to cool for 20 minutes and then roll into medium-sized balls.
  • Roll in coconut and store in an airtight container, in the fridge.
