Father’s Day is coming up and it’s in winter. We know you want to braai on a beautiful sunny day, even when it’s a bit cool. How about something that’s so quick to make that you’ll barely feel the cold? Dad’s favourite apricot snoek braai recipe is a classic recipe passed down generations and we want to share the joy of flavour with you. It’s sweet, sticky, a bit spicy and a flavour of explosion from a basic recipe which brings this local fish to brand new heights.

Dad’s favourite apricot snoek braai tips

Snoek, a long thin snake mackerel fish is a favourite of South Africans due to its flavour but also accessibility in shops. The apricot adds sweetness while chilli just lifts the flavour a bit. You want to baste the fish before putting it on the fire, skin-side down first. Only 7 minutes are needed as you baste the flesh on top. Flip it after 7 minutes and marvel at the crispy skin. You can baste it lightly before flipping it just for a moment again. It’s perfectly paired with sweet potatoes you put into the braai coals earlier.

Ingredients

  • 1 1 snoek, defrosted

  • Glaze
  • 125 ml 125 butter

  • 100 ml 100 apricot

  • 50 ml 50 lemon juice

  • 4 tbsp 4 chicken or fish spice

  • 1 clove 1 garlic, crushed

  • chilly (optional)

Method

  • In a saucepan, bring all the glaze ingredients to a boil.
  • Rub the snoek with coarse salt before braaing. Wash off the salt before placing on the grill.
  • Wait for coals to be at medium-high heat to braai snoek. The cooking time is very quick.
  • Place your snoek in a folding braai grid. Place on a hot fire with the skin side downward. Baste the snoek regularly with the glaze. Braai for 7 minutes, until the fish turns white.

Notes

  • Never defrost fish on a metal surface.
