The creamy custard with passion fruit topping is great with some zesty cream crackers for crunch.

If you don’t have cream crackers, Tennis Biscuits also work perfectly well with this dessert and you can also turn it into one large pie if you want to. The custard is creamy with subtle flavours which pairs great with the fruity topping. A tangy passion fruit topping adds a finishing flavourful flourish. Adjust the sweetness to your preference. You can also get creative and use different fruits and berries when you want to try something new and inspired.

A delightful custard slice recipe with a cream cheese and granadilla fruit topping

Ingredients

  • 100 g 100 full-cream milk powder

  • 1 litre 1 water

  • 6 sachets 6 sweetener

  • 1 tbsp 1 honey

  • 1⁄2 cup 1⁄2 cornflour (maizena)

  • 1⁄2 cup 1⁄2 flour

  • 1 tsp 1 vanilla essence

  • 1 packet 1 Cream Crackers

  • 250 g 250 smooth cream cheese

  • 3 3 granadillas (passion fruit), cut in half and pulp removed

  • 6 6 egg yolks

  • 1 1 15cm x 25cm dish

Method

  • STEP 1
  • Separate egg yolks from egg whites.
  • Break crackers in halves and place on the bottom of the dish. Set dish to one side.
  • STEP 2
  • Keep 12 cup water aside, heat up the remaining water. Add milk powder to the heated water and, on low heat, whisk continuously until it is smoothly mixed.
  • Add vanilla essence and remove from heat. Cool for 5 min.
  • STEP 3
  • Add egg yolks, half a cup water, cornflour and flour in a bowl, mix until thick and smooth. Add some of the milk to egg yolk mixture and mix until smooth.
  • Add the remaining milk and whisk continuously. Return to very low heat and keep on stirring until thickened. Add the 4 sachets sweetener and honey. If you would like it sweeter, add one more sweetener.
  • When the mixture is thick and difficult to stir you know it is ready.
  • STEP 4
  • Pour the custard mixture onto the crackers and spread evenly.
  • Place another layer of cream crackers on top of the custard mixture. Set aside.
  • STEP 5
  • Add one tablespoon milk and two sachets sweetener to the cream cheese and whisk with a fork.
  • Spread cream cheese evenly on top of biscuits.
  • Lastly, spread granadilla pulp on top with a spoon.
