Crustless Bacon Quiche with Mushrooms and Spinach

One of the best meals of the day is breakfast. It’s often filled with foods high in fat and protein to keep you moving during the day. These usually include bacon and eggs but did you know that you don’t need to limit yourself this way. That’s why so many people like the idea of “brenner” or breakfast for dinner. Quiche is one of those meals that you can enjoy without any guilt and our crust-less bacon and spinach quiche with mushrooms and cheese is no exception.

Crust-less bacon and spinach quiche tips

Similar to a frittata, this one pan meal provides you with all the classic quiche ingredients like bacon, eggs, spinach and cheese. However, mushrooms are another great addition as they add texture and fibre to the meal. The recipe is also exceptionally cheesy and you can add some feta on top if you want to as well. Include some finely chopped green and red peppers for colour or top with some jalapeño peppers if cayenne pepper isn’t for you.

Ingredients

  • 1 onion, finely chopped

  • 1 clove of garlic, finely chopped

  • 250 g diced bacon

  • 400 g mushrooms, finely chopped

  • 5 extra large eggs

  • 250 ml cream (optional)

  • 250 ml self-raising flour

  • salt and pepper to taste

  • 1 – 2 ml cayenne pepper

  • 500 g fresh spinach leaves

  • cup grated cheddar cheese

  • paprika

Method

  • Preheat the oven to 180°C.
  • Lightly grease an oven dish. If using aluminum foil trays for freezing, spray lightly with Spray and Cook.
  • Pan-fry the onion, garlic and bacon together. Add the mushrooms and pan fry. Set aside.
  • Mix these eggs, cream, self-raising flour, salt, pepper, cayenne pepper and 1 cup grated cheddar cheese together, set aside.
  • Cut spinach leaves finely, hard pieces removed.  
  • Mix the bacon mixture and egg mixture with the spinach leaves. Place in an ovenproof pie dish or dishes.
  • Sprinkle ½ cup grated cheese and paprika over the quiche.
