Cookies or biscuits, whatever you call them, are always a delightful treat. If you’re tired of the usual sweet cookies, why not try something spicy and savoury with these crunchy ginger cookies. They’re perfect for holiday-themed parties, tea time or just a sneaky snack. They are easy to make and taste just like when grandma used to make them.

Making crunchy ginger cookies

Chances are high that you already have all of the ingredients at home, making this an easy recipe to make. It’s all about butter, ginger, honey and brown sugar. The combination of spicy ginger and sweet honey gives these cookies some great contrasting flavours. You can use any mould you want to cut out fun shapes and if you feel like it, add some desiccated coconut on top. Get creative and enjoy the look and taste of these cookies.

Ingredients

  • 250 g flour

  • 1 tsp bicarbonate of soda

  • tsp ground ginger

  • 100 g butter, softened

  • 1 cup brown sugar

  • 1 egg

  • 4 tbsp golden syrup

Method

  • Preheat the oven to 180°C.
  • Add the flour, butter, ground ginger and bicarbonate of soda in a mixing bowl and mix together until crumbly. You can use your fingers to rub the butter into the flour mixture.
  • Add the soft brown sugar, golden syrup and egg, mix well using your hands until it forms a firm pastry.
  • Lightly dust a surface with flour. Roll the dough out on the floured surface to about 5mm thick. Cut out the cookies using a pastry or cookie cutter.
  • Place the cookies on a greased baking tray and bake in the preheated oven for approximately 7 minutes or until golden.
