Crunchy crab stick salad tips

Adding seasonings such as spices, herbs, honey and citrus to salad dressings, you add great balance with three parts oil to one part acid such vinegar, lemon or lime juice. You can get ready-made crab sticks or cook your own which only takes a few minutes. If you want a tasty lunch for work, this recipe can be made ahead of time and you can add the crab in on the day. It’s also great as a dinner starter or even as a whole meal for the summer evening.

Ingredients

  • For the salad
  • 500 g 500 shredded crab sticks

  • 1 large 1 carrot, Julienned 

  • 2 2 firm ripe nectarines cut into thin matchsticks 

  • 3 3 firm red plums cut into matchsticks 

  • 1 cup 1 shredded red cabbage

  • For the dressing
  • 3⁄4 cup 3⁄4 mayonnaise (Japanese mayo is great)

  • 1 ½ tbsp 1 ½ lime juice

  • 2 Tbsp 2 soy sauce

  • 2 tbsp 2 soy sauce

  • zest of 1 lime

  • 2 cloves 2 crushed garlic 

  • 1 tbsp 1 grated ginger

  • 4 tbsp 4 honey

  • salt & pepper to taste 

  • 2 tsp 2 Wasabi paste

Method

  • For the salad
  • Stir all the ingredients together and dress just before serving.
  • Garnish with toasted black and white sesame seeds 
  • For the dressing
  • Blend all the ingredients together, taste and adjust seasoning
