With so many different cookies and biscuits to go with your tea, it can be hard to choose which one comes next. If you enjoy caramel, you’ll love these crunchy caramel biscuits. They are golden treats with character and the perfect snack for your next tea time with friends or just at work.

Crunchy caramel biscuits

The cookie dough is very simple and is refrigerated so that it has a moment to rest and will help them mature and keep their form when baking. Because it’s very sweet and caramel needs it, a pinch of salt goes a long way. You can also let your dough rest for a day or two in the fridge. The addition of nuts helps with even more crunch and goodness. They will come out as spiced golden treats that pairs well with your choice of tea or coffee.

Ingredients

  • 1 cup 1 butter

  • 1 cup 1 white sugar

  • ½ cup ½ brown sugar

  • 1 1 egg, beaten

  • cups flour

  • 1 tsp 1 bicarb of soda

  • 1 tsp 1 cinnamon

  • cups rolled oats

  • 1 tsp 1 vanilla essence

  • 1 pinch 1 salt

  • Optional
  • ½ cup ½ crushed walnuts or pecans

Method

  • Combine butter, sugar and the egg together. Add sifted flour, bicarb and cinnamon with a small pinch of salt.
  • Add the rest of the ingredients and chill for an hour in the fridge.
  • Scoop walnut-sized balls onto greased baking tray and flatten with a sugared glass.
  • Bake at 180°C for 10 minutes. Let them cool on a wire rack when done.
