Crunchies – South African much-loved oatmeal cookie bars

Teatime is just not the same without golden-brown crunchies to dip in your tea. If you are a South African, these crispy bites will conjure nostalgic childhood memories.

Crunchies are so quick and easy to prepare that if you have hungry teenagers in your house, these tasty bites will keep them happy and satisfied. This recipe is especially perfect to keep the cookie jars filled during school holidays.

Since these crunchies contain a generous quantity of oatmeal, they are also perfect as a breakfast bite with a cup of coffee or tea. This easy recipe makes about 20 of the tastiest cookies without a huge amount of effort. The best part is that you will be done in half an hour.

However, if you want to make sure there are enough crunchies in your house, you may want to double, triple or quadruple this recipe. No matter in which quantities you prepare these tempting cookies, it will still not take you much time to whip them together.

Ingredients

  • 200 g 200 salted butter

  • 2 cups 2 raw oats

  • 1 cup 1 flour

  • 1 cup 1 shredded coconut

  • 1 cup 1 sugar

  • 1 tablespoon 1 syrup

  • 1 teaspoon 1 baking soda

Method

  • Melt the butter in the microwave taking care not to burn it.
  • Once the butter is fully melted, stir in the syrup.
  • In a separate bowl, mix all the dry ingredients together thoroughly.
  • Add the melted butter mixture and mix until well combined.
  • Press the mixture out into a greased or lined flat baking tray.
  • Bake in a preheated oven at 160°C for 15 – 20 minutes until golden brown. Check them regularly in the last five minutes as the edges burn quickly.
  • Remove the sheet from the oven and cut them out before they cool as the crunchies will crisp up on cooling making them difficult to cut without breaking. Cut them into small squares about 50 – 70mm wide by cutting a few rows in each direction with a sharp kitchen knife.
