There’s so much sport on during warm South African summer afternoons and you need energy to cheer on your favourite teams and players. Having great snacks on a large platter is an easy way to feed your friends and family. Having some of your favourite fried foods will keep everybody fed and just make them enjoy the day. These crumbed chicken strips are a classic party platter addition that everybody loves.

Crumbed chicken strips tips

If you want the most tender chicken, you can marinade it in yoghurt or buttermilk overnight and this can be the first dredge instead of eggs. When double-dredging for extra crispiness, make sure to have one hand for the wet ingredients and a dry hand for the other. This will ensure less of a mess and make more consistent chicken strips. They are best served with a mayonnaise and mustard dip or make your own honey mustard for amazing results.

Ingredients

  • 2 2 boneless skinless chicken breasts, sliced into finger-sized strips

  • cup Italian-seasoned bread crumbs

  • 4 large 4 eggs, beaten

  • ½ cup ½ all-purpose flour

  • 1 tsp 1 garlic powder

  • vegetable oil, for frying

Method

  • Set up a breading station: Place breadcrumbs, eggs, and flour in 3 separate shallow bowls. Whisk garlic powder into eggs. Season breadcrumbs generously with salt and pepper.
  • Coat chicken strips in flour, then dip in egg, then breadcrumbs, back in egg, then back in breadcrumbs.
  • In a large Dutch oven, heat 3-4cm oil to 160°C. Set a rack over a baking sheet and line with paper towels.
  • Fry chicken, in batches, turning once, until golden and an instant-read thermometer inserted in the thickest part of each piece registers 160°C, about 5 minutes.
  • Transfer chicken to prepared rack and let sit for 5 minutes before serving.
