Eating well can be tasty and doesn’t need to be a chore to make either. Chicken is high in protein, low in fat and perfect for anybody leading a healthy lifestyle. This Crumbed Chicken & Low-Carb Zoodles combines the goodness of chicken with zucchini noodles. The recipe serves two people but you can very easily adjust it for a bigger family. It’s a tasty, healthy and quick deconstructed pasta recipe that will suit anybody’s daily needs.

The crumb for the chicken is something you’ve probably never tried. The combination of almonds and egg creates a great batter that tastes even better than it sounds. The almonds also add some great healthy fats and fibre to your Crumbed Chicken & Low-Carb Zoodles. It’s easy to make your own spiralised zucchini noodles but you can also buy them at your favourite health shop or some supermarkets. Each serving is only 373 calories, making it the perfect light evening meal.

Ingredients

  • cup almonds, raw, unsalted

  • 100 g 100 chicken breasts, skinless, boneless

  • 1 1 egg

  • 1 tbsp 1 extra virgin olive oil

  • 1 medium 1 lemon

  • 400 g 400 zucchini (baby marrow), spiralised into noodles

  • 1 clove 1 garlic, fresh, minced

  • 1 tsp 1 paprika, ground

  • 1 tsp 1 black pepper, ground

Method

  • Blend the almonds until they are a powder texture.
  • Break the egg in a bowl, and whisk.
  • Cut the chicken breasts in half by slicing down the length of them. Using a tenderizer, pound out both sides of each chicken piece. Coat the chicken completely in egg. Then, coat each side of the chicken in the ground almonds.
  • Heat the olive oil in a pan over medium heat. Add the chicken pieces, and cook for 5 minutes on each side.
  • Once the chicken is cooked through, remove it from the pan. Add the spiralized zucchini to the pan. Squeeze half of the lemon onto the vegetables, and add the garlic, paprika and pepper. Cook for 2 minutes.
  • Serve the chicken with lemon slices (garnish with micro herbs), and serve the zoodles on the side.
