The marinade includes cream, cream cheese, cayenne pepper and turmeric which will tenderise the chicken and bring a ton of flavour. This recipe triples the spice with the batter, the flour coating and you even have some spice in the mayonnaise. When dipping your chicken pieces into the coating, use the double hand method. One hand is used to dip and the other hand to remove the piece from the batter and place it into the oil. Ingredients

  • 100 g cream cheese

  • 100 ml cream

  • 5 ml cayenne pepper

  • 5 ml turmeric

  • 15 ml fresh oregano (5ml dried)

  • 5 ml black pepper

  • 5 ml salt

  • ½ fresh lemon juice (or 1 lime)

  • Coating
  • 250 ml flour

  • 5 ml cayenne pepper

  • 15 ml oregano (5ml dried)

  • 5 ml salt

  • oil for frying

  • Spicy Mayonnaise
  • 10-15 ml sriracha or Tabasco sauce

  • Lemon or lime juice

  • 250 ml mayonnaise

Method

  • Marinade
  • Mix the cream cheese, cream, cayenne pepper, turmeric, oregano black pepper and salt together. Add the egg and lime/lemon juice and mix well.
  • Add the chicken, mix to coat, then cover and place in the fridge for at least 30 minutes.
  • Coating
  • Mix the flour, cayenne pepper, salt and oregano together.
  • Dip each cream coated chicken breast into the flour mixture, then shallow fry hot oil until golden and crisp.
  • Spicy Mayonnaise
  • Add the sriracha or tabasco sauce and lemon/lime juice to the mayonnaise to taste.
  • To serve: Serve chicken hot with the spicy mayonnaise dipping sauce
