Crème Brûlée – Creamy and oh-so-indulgent dessert

If there is one dessert that always captures one’s attention, it is Crème Brûlée. This creamy, almost pudding-like custard with crusty, caramelised sugar on top is decadent and delightful.

The rich, luxurious custard consists of heavy cream, egg yolks, sugar and vanilla. It is utterly delicious. Whipping together this dessert will make you feel like a five-star chef. It takes a bit of time to prepare Crème Brûlée but it is worth every second. Each bite through the hardened caramelised sugar into the soft, creamy interior is pure enjoyment and a taste sensation.

When preparing this dessert, make sure to follow the exact time instructions as set out in the method of this recipe. Also, you need ramekins to prepare the individual portions of Crème Brûlée. If you have a blowtorch available, that is most useful to get the sugar to that delectable, caramelised texture.

Ingredients

  • 5 5 egg yolks

  • 150 g 150 sugar

  • 3 cups 3 cream

  • ¼ teaspoon ¼ salt

  • 1 teaspoon 1 vanilla

Method

  • Preheat the oven to 163°C.
  • Whisk the egg yolks, 100 g of sugar with the vanilla essence until thick and creamy.
  • Pour the cream in a saucepan and stir over low heat until it almost comes to a boil. Remove the cream from the heat set aside.
  • Stir the cream into the egg yolk mixture and beat until combined.
  • Pour the cream mixture into a top pan of a double boiler and stir over simmering water until the mixture lightly coats at the back of a spoon. This takes about 2 – 3 minutes. Remove the custard mixture from the heat.
  • Pour into ramekins and bake in a preheated oven for 30 minutes.
  • Remove from the oven to cool down and refrigerate for 1 hour or overnight.
  • Before serving, use the 50 g leftover sugar to sift over the Crème Brûlée and use a blow torch until the sugar melts. Garnish and serve.
