Cream of beetroot soup: A delicious and heartwarming winter meal

Winter is still going strong and it’s always soup weather. A warm and creamy soup has a way of making you feel warmer and happier. A bowl of cream of beetroot soup is tasty but is also packed with nutrients that will boost your immune system during the cold months. If you’re not a fan of eating beetroot, the creamy soup might be your gateway.

Cream of beetroot soup tips

Beetroot has nitrates which help with oxygen transport in the blood which helps your immune system do its incredible things. The addition of a creamy bechamel sauce helps improve flavour and texture. You can get creative and add a few chilli flakes to add some depth together with the sugar. Garnish your beetroot soup with some cream or more bechamel with some herbs and a squeeze of lemon. Enjoy with some buttered bread.

Use an immersion blender to make your soup as smooth as possible.

Ingredients

  • 3-4 3-4 cooked beetroots

  • 3 cups 3 high-quality stock

  • 1 cup 1 thick white sauce (bechamel)

  • sugar

  • Salt and pepper

  • Bechamel sauce/white sauce
  • 1 tbsp 1 butter

  • 1 tbsp 1 flour

  • 1 cup 1 milk

Method

  • Bechamel sauce/white sauce
  • In a small saucepan, combine butter and flour with a whisk until flour smell goes away.
  • Slowly add milk while continuously whisking and cook until the sauce thickens.
  • Take off of the heat and keep warm.
  • For the soup
  • Pour the stock onto the hot white sauce. Let it get to a low simmer.
  • Add the sieved cooked beetroot and seasoning.
  • Add a little sugar to improve the flavour.
  • Garnish with parsley and a dash of bechamel or cream
