Want to try a new salad? What about some fluffy grains of couscous flavoured with tasty herbs and juicy pomegranates? Add some zesty lemon juice and you have a mouth-watering couscous salad. This recipe is a must-have at your next family gathering or dinner party.

Couscous is a quick and easy feather-light grain to prepare. Whether you serve it in the place of rice or as a salad with some greens, it adds some delicious flavour to mealtimes.

This North African grain is not only loved in Africa but all over the world. Couscous is basically small steamed balls of crushed durum wheat semolina. Traditionally, it is served with a rich, flavoursome stew on top, but enjoying it as a flavour-infused salad is also really scrumptious.

If you are trying to cut your meat intake, this couscous salad is an excellent option. This meal is perfect for anyone following a vegetarian or vegan diet.

Ingredients

  • 2 cups 2 couscous

  • ½ cup ½ fresh mint, chopped

  • 100 g 100 pomegranate

  • 5 ml 5 salt

  • 4 tablespoons 4 olive oil

  • 5 ml 5 black pepper

  • 450 ml 450 vegetable stock

  • ½ cup ½ parsley, chopped

  • 50 ml 50 preserved lemon juice

Method

  • Place the couscous in a pot and add olive oil, salt and pepper.
  • Add the vegetable stock, let it simmer for 2 minutes and absorb the flavours. Remove from the heat.
  • Pour the couscous into a bowl let it cool.
  • Fluff the couscous using a fork to loosen the grains and stir through the lemon juice, mint and parsley.
  • Scatter with pomegranate seeds before serving.
