Classic potato salad: No family dinner is complete without it

There are loads of potato salad variations and our classic potato salad is simple to make and always a winner. It’s the perfect braai side.

We love family feasts as much as you do. If you’ve seen movies and TV shows from the USA, you will have come across potato salad. Or, you have the king or queen of the salad in your circle of friends or family. Our classic potato salad is based on the German style of the recipe. It’s got rustic potatoes with the skin still on and some cucumber and those hard-boiled eggs. This is the recipe you probably remember eating.

Classic potato salad tips

You can cook the potatoes as tender as you want to and with the skins on, adds some texture, just like the fresh cucumber. The egg yolks add to the creaminess of the mayonnaise instead of dotting around the bowl. If you want to add something special, do like that one TV show character and add paprika to the mayonnaise mix or sprinkle it on top as a garnish for some spice. Get creative and enjoy the next family feast.

Ingredients

  • large cooked and peeled potatoes

  • spring onions, chopped

  • 1 large 1 peeled cucumber

  • 5 ml 5 caraway seeds

  • 4 4 hard-boiled eggs

  • 375 ml 375 mayonnaise

  • 60 ml 60 vinegar

  • 8 ml 8 salt

  • 1 tsp 1 freshly ground black pepper

  • 15 ml 15 mustard

  • chopped parsley

Method

  • Cook the potatoes in with their skins in boiling salted water for 20-30 minutes.
  • Drain the peel and while warm, cut into small blocks.
  • Combine potatoes, spring onions, caraway seeds, salt and pepper. Toss them and mix well.
  • Shell the cooked eggs and separate yolks from the whites. Chop the egg whites finely and add to the potato mixture.
  • Place in the fridge.
  • Mash the egg yolks finely and combine with the mayonnaise, vinegar and mustard.
  • Mix well and pour over the chill the potatoes, toss and mix again.
  • Peel and chop the cucumber and add to the mixture just before serving and garnish with parsley.
