Citrus panna cotta – Silky dessert with a dash of zest

We are about to enter the festive season and what better way to unwind than with a bowl of citrus panna cotta. This creamy vanilla dessert is deliciously indulgent and will easily receive the thumbs up from everyone who tries it.

With the weather building up to our warm summer months, now is the time for a cold fridge-based dessert. Citrus panna cotta only takes five minutes to whip up before it cooks for a mere ten minutes and then spends a full three hours in the fridge to set. Combined with a refreshing zesty flavour, and you have the perfect summer dessert.

This citrus panna cotta recipe makes 40 portions so if you are planning an end of year bash, this recipe will do the trick. Otherwise, adjust the quantities for fewer people. Alternatively, you can divide the 40 portions into larger portions for the ultimate creamy indulgence.

Ingredients

  • sheets gelatine

  • 100 ml 100 water, cold

  • 1 litre 1 heavy cream

  • 1 litre 1 milk

  • 100 ml 100 sugar

  • 4 strips 4 fresh orange, lemon, lime, grapefruit, peeled and part only, no white or pips)

  • 1 1 vanilla bean, split lengthwise, scraped

Method

  • In a small bowl, add the gelatine over the water and let it soak for 10 minutes (do not stir).
  • Meanwhile, heat cream, milk sugar, orange, lemon, lime, grapefruit over medium heat, stirring occasionally, to dissolve the sugar. As soon as it simmers, turn off the heat and add the gelatine mixture, stirring to dissolve the gelatine. If the gelatine doesn’t completely dissolve in 3 minutes, return to the heat and warm gently until dissolved.
  • Strain mixture into a pitcher to remove the vanilla bean and citrus rind.
  • Pour the mixture into ramekins or dessert cups, Chill, uncovered, for at least 3 hours or until firm.
  • To unmould, dip the cups in hot water for 10 seconds, then turn the panna cotta out onto dessert plates or simply serve in the cups.
  • Take out segments to the citrus that are left and decorate the panna cotta and serve.
