Ingredients

  • 250 g 250 unsalted butter

  • 250 g 250 dark chocolate

  • 100 g 100 flour

  • 125 g 125 castor sugar

  • 5 5 egg yolks

  • 5 whole 5 eggs

Method

  • Preheat the oven at 160˚C.
  • Add the egg yolks to the whole eggs.
  • Place the sugar in a separate bowl and add the eggs. Gently start to whisk the mixture until all the egg is incorporated into the sugar. Continue whisking until fluffy and double in volume.
  • Over a very low heat melt the butter and add chocolate, stirring slowly.
  • Add the melted butter and chocolate to the egg and sugar mixture.
  • Stir through gently until fully combined.
  • Add the flour and gently mix for longer than 1 minute.
  • Coat the dariole mould with melted butter and lightly dust with cocoa powder.
  • Pour into dariole moulds and bake in the oven at 180˚C for 8 minutes.
