Everybody loves dessert and chocolate is often known as the best pudding flavour out there. A smooth chocolate dessert is easy to make and is always a crowd-pleaser, especially when presented in good looking cups or glasses. Our chocolate dessert cups take less than twenty minutes to make and can be stored in the fridge until serving. It’s great for those summer braai feasts and dinner parties.

Chocolate dessert cups tips

Using a double-boiler will help you evenly melt the chocolate and keep it smooth. Chocolate pudding likes a bit of coffee as it makes the chocolate tate even more chocolaty. Remember to temper the egg yolks and rum mixture by adding a tablespoon of chocolate at a time so the mixture warms up slowly and won’t scramble. Serve in a cup or glass with a garnish of shaved chocolate, crushed nuts and whipped cream or ice cream.

Ingredients

  • 170 g 170 plain chocolate

  • 15 g 15 butter

  • 3 3 eggs

  • 1 tbsp 1 rum (optional)

  • 1 tbsp 1 coffee essence

  • chocolate curls to decorate

Method

  • Put the chocolate and butter in a bowl placed over a pan of hot, not boiling, water. Leave to dissolve, stirring constantly.
  • When the chocolate is completely melted remove it from the heat and beat in the egg yolks, rum if used, and coffee essence. First add a tablespoon or 2 of the chocolate into the egg mixture and get it to the same temperature so that the eggs don’t scramble.
  • Whisk the egg whites stiffly then fold them into the mixture.
  • Pour into 4 small cups or glasses and leave in a cool place until set.
  • Just before serving, top each with a few chocolate curls.
