Chocolate cake is everybody’s favourite and when you add coffee into the mix, you end up with something special. Our chocolate coffee cake is all the taste you expect with a big dash of buttery chocolate icing. If you have a birthday or any other celebrating, this is the cake to bake for your friends or family.

Chocolate coffee cake tips

Coffee cake is often made in a square pan but you can make it however you want to. The coffee and chocolate pairs well and be sure to use strong coffee so that the flavour penetrates. The moist chocolaty cake is only improved by butter icing with chocolate and more coffee essence which lifts the chocolate taste even more. Decorate with chocolate balls or flakes and even a few berries.

Ingredients

  • For the cake
  • 6 tbsp cocoa

  • 1 tsp vanilla

  • 125 g butter

  • 1 cup strong hot coffee

  • 1 cup sugar

  • 3 eggs

  • 200 g cake flour

  • 3 tsp baking powder

  • ½ tsp salt

  • Chocolate butter icing
  • 60 g butter

  • 3 tbsp hot milk

  • 2 cups icing sugar

  • 1 tsp vanilla essence

  • 5 tbsp cocoa

  • ½ tsp coffee essence

Method

  • Preheat oven to 175°C.
  • Melt cocoa with hot coffee, mixing well until mixture thickens. Let it cool.
  • Add sugar slowly, beating in well. Add unbeaten eggs, one at a time, beating well after each addition.
  • Add vanilla extract.
  • Sift together dry ingredients, add alternately with cold chocolate mixture to first mixture.
  • Add a little milk if necessary.
  • Bake in 2 greased cake pans in moderate oven at 175°C for 35 minutes.
  • Chocolate butter icing
  • Cream butter; add sugar gradually; mix cocoa to a paste with hot milk and add to butter and sugar, beating well. A little more milk may be added if necessary to bring to right consistency.
  • Lastly, add vanilla essence and coffee essence. If desired, instead of coffee essence,1 teaspoonful of cinnamon.
