Choc-kits cookies – Just in time for the holidays

You can never have too many teatime biscuits. Whip together a batch or two of these choc-kits cookies to keep your cookie jars interesting.

The summer holidays are here and if you have children at home, they are always looking for a snack to nibble on. These crunchy choc-kits cookies will provide some variety to your cookie jar contents and make your children’s sun-tanned faces beam with joy.

Preparing these choc-kits cookies will take about 30 minutes of your time. However, if you want to add a delicious filling, you can add any filling of your choice. Chocolate is always a favourite, and you can get the recipe of a delicious chocolate ganache filling here.

It’s holiday time, so why not try something new? These cookies are the perfect holiday treat and a great activity to do with your kids – especially if you allow them to sandwich the cookies together with a mouth-watering filling.

Ingredients

  • 200 g 200 oats

  • 90 g 90 coconut

  • 140 g 140 flour

  • 220 g 220 sugar

  • 1 teaspoon 1 bicarbonate of soda

  • 150 g 150 margarine

  • 4 teaspoons 4 golden syrup

  • 2 2 eggs

Method

  • Roast & blend oats and coconut set aside.
  • Mix the flour, sugar, bicarbonate and add to the oats mixture.
  • Melt the margarine with golden syrup and let it cool down for a few minutes.
  • Add into the flour mixture, mix with a wooden spoon and add the eggs one at a time.
  • Form into a small cookie size press with a fork, put in the fridge in a baking tray to set for 30 minutes.
  • Bake at 180°C until cooked on the edges.
  • You can put any filling in the middle of the cookies if you want.
