Chilli pap and sweetcorn bake – Step up your braai side dishes

The ultimate braai side to complement a succulent T-bone steak or juicy chop.

Whether winter or summer, South Africans love a good braai. This chilli pap and sweetcorn bake is the perfect braai side dish. Although it can be enjoyed any time of the year, it provides some extra comfort when the weather is cold.

This recipe is a clever combination of pap and chakalaka with sweetcorn and cheese baked in the oven to a tasty golden crispiness on top and meltingly delicious pap underneath.

Transform your otherwise ordinary pap dish into a fabulous baked dish whipped together in less than an hour. Although it is really tasty as a braai side dish, it also goes excellently with a roast or you can even enjoy it without an accompanying protein.

No need to go to the groceries store as you most likely already have all the ingredients in your pantry.

  • ½ onion, sliced

  • 2 chillies, sliced

  • 2 tablespoons oil

  • 2 cloves garlic, chopped

  • 3 cups prepared pap

  • cups grated cheddar or gouda cheese

  • 1 can sweetcorn with kernels

  • 1 can spicy Chakalaka

  • a handful Handful of chopped mint and coriander


  • Preheat the oven to 180˚C.
  • Sauté the onions, chillies and garlic in a frying pan on a medium heat.
  • Add the drained sweetcorn and a pinch of salt and pepper for flavour. Set aside to cool.
  • Mix 1½ cups of pap with the corn, mint and coriander and create the first layer in an oven dish.
  • Spread half the can of Chakalaka over the top of the pap and sprinkle a little cheese on top. 
  • Add the second layer of pap and top with the other half of the Chakalaka. Spread the remaining cheese over.
  • Bake in the preheated oven for 15 – 25 minutes. 
  • Serve immediately.
