Ingredients

  • 200 g 200 calamari tubes

  • 50 g 50 calamari tentacles

  • 1 1 lemon

  • 1 teaspoon 1 paprika

  • 1 teaspoon 1 butter

  • 1 1 chillie, chopped

  • 1 teaspoon 1 parsley, chopped

  • 1 teaspoon 1 garlic, chopped

  • 2 2 egg yolks

  • 150 ml 150 canola oil

  • 1 clove 1 garlic, finely chopped

  • salt and pepper

Method

  • Calamari
  • Dry calamari tubes and tentacles with paper towel and set aside.
  • In a hot dry pan add calamari and cook on one side until the tubes balloon, roughly 2 minutes. Flip each tube and cook a further 2 minutes.
  • Drizzle oil into the pan, add the chilli, calamari tentacles and the juice of half a lemon.
  • Remove the pan from the heat, add butter, parsley, salt and toss.
  • Mayo
  • In a mixing bowl, whisk egg yolks, paprika, chopped garlic and juice of half a lemon.
  • Pour a slow stream of oil into the egg mix while whisking.
  • Add oil until desired consistency.
