Chili Corn Cakes – The best way to spice-up a braai

Summer is approaching and you need to start thinking about sides. These Chili Corn Cakes are the perfect way to spice up any braai.

It’s getting much warmer here in South Africa and so, there are braais every weekend. You need the perfect side to go with it. We love bringing our own sides to a braai at a friend or family member’s house and these Chili Corn Cakes will likely become the star of the show. What’s better than some corn, bacon and chili, right? If you’ve made corn or pumpkin fritters, this recipe will be especially easy to make.

There aren’t many processes in this great recipe and the only one that needs actual attention are the chilies. To seed your chilies, slice them in half along the length and use the same knife to scrape the seeds out, it’s that easy. If you have them on your own and love spice, you’re welcome to keep the seeds in. Then, it’s only about mixing and frying the Chili Corn Cakes until golden brown on each side, which only takes about five minutes.

Ingredients

  • 1 tbsp 1 sunflower oil

  • 4 rashers 4 smoked bacon

  • 2 2 red chilies, seeded and chopped

  • 1 1 red onion, chopped

  • 2 cups 2 corn kennels, cooked

  • 1 cup 1 rice flour

  • 1 tsp 1 baking powder

  • ½ cup ½ milk

  • 2 2 eggs

  • 200 g 200 cheddar cheese, grated

  • ½ cup ½ chopped parsley

  • 1 tsp 1 salt

  • ½ tsp ½ black pepper

Method

  • Pour the oil into a medium frying pan on medium heat then cook the bacon, chili and onion until golden brown.
  • In a large mixing bowl, combine the corn, flour, baking powder,eggs, milk, cheese, parsley, salt and pepper.
  • Add the bacon and onion mixture and combine well to form a batter.
  • Spoon the tablespoon batter into a non-stick frying pan and cook on each side for 2-3 minutes until golden brown.
