As South Africans, we love sosaties and cooking things on sticks like people have done for a very long time. However, in some countries it has a much longer history and chicken satay is one of those recipes. This simply tasty chicken satay recipe is packed with the spices and peanut sauce that turned it into the national dish of Indonesia. It has gained loads of popularity over the last year and that’s why it’s also the perfect dish for your home.

The chicken will marinade for a bit or overnight to bring more flavour into it but it’s also going to help tenderize it. The peanut sauce is beautifully rich and familiar, but a surprise flavour with chicken if you haven’t tried it before. You can either grill them in a pan or on the braai, depending on your options or mood. Serve your chicken satay with a fresh green salad or stir-fried vegetables for some colour, along with some fluffy rice.

Ingredients

  • For the marinade
  • 1 kg 1 chicken fillets

  • 1/4 cup 1/4 soy sauce

  • 1/4 cup 1/4 vegetable oil

  • 2 tbsp 2 Asian chilli sauce

  • 1/4 cup 1/4 dark brown sugar, packed

  • 2 garlic 2 cloves, minced

  • 2 tbsp 2 coriander, chopped

  • 2 2 limes, juiced

  • For the peanut sauce
  • 1 tbsp 1 peanut oil

  • 1/2 cup 1/2 smooth peanut butter

  • 1/2 cup 1/2 coconut milk

  • 1/2 tsp 1/2 chilli sauce

  • juice of a lime

Method

  • Cut the chicken breasts into cubes. 
  •  In a container, mix all the ingredients together.
  • Place all the chicken cubes in the marinade. Place in the fridge for 2 hours.
  • Thread three pieces of chicken on a skewer.
  • On a grill pan, medium heat, grill the chicken skewer until golden brown approximately 3-4 minutes per side.
  • For the peanut sauce
  • In a saucepan, heat the oil on low heat. Add the rest of the ingredients. Mix until smooth. Remove from heat. Let cool.
  • Serve your satay with basmati rice, slices of cucumber  or a garden salad. Sprinkle with fresh coriander leaves.
