This chicken burger salad recipe is perfect for anybody who cooks their meals ahead of time and still enjoy loads of tasty food while staying on that diet. You will have everything from your favourite chicken burger without the bread, making it perfect for anybody cutting out carbs a bit.

These patties have all the delicious flavour of a chicken burger patty while taking into consideration a healthy calorie intake for those of us who are conscious of the number of calories we consume every day. Paired with a zesty avocado salad consisting of rocket, mint, avo and lemon juice, this light lunch is a meal to look forward to! It may just become a meal that you would like to enjoy more than once a week! This means that you can do meal prep ahead of time and store it in air-tight glass containers in the fridge.

Ingredients

  • 120 g 120 chicken mince

  • 1 sprig 1 spring onion

  • 1 medium 1 egg

  • t tbsp t coriander, fresh (cilantro)

  • 1 tsp 1 olive oil, extra virgin

  • ½ small ½ avocado

  • 1 cup 1 rocket (arugula), raw

  • 1-2 1-2 mint leaves, chopped finely

  • 1 tbsp 1 lemon juice

Method

  • Mix the minced chicken, onion, egg and coriander in a bowl. Form into 3 mini burger patties.
  • Heat the oil in a pan and fry the patty for about 5 minutes on each side until golden and cooked through.
  • Combine the rocket, mint, avocado and lemon juice to make a salad.
  • Serve the burgers with lemon slices and the avocado salad on the side.
