Cheesy nachos with beans and sweetcorn – Simply irresistible

Cheesy nachos, anyone? This much-loved Mexican dish is packed with a variety of irresistible flavours. The best part is of course the gooey cheese that makes this snack incredibly appetising.

This cheesy nachos recipe includes jalapeños, black beans and sweetcorn, adding some substance to this meal. Like other legumes, black beans are loaded with protein and fiber. 

Black beans also help to maintain healthy bones and to manage diabetes. They further lower your blood pressure and improve your heart health. They can even help to prevent cancer, promote weight loss and aid digestion. So, there are so many great reasons why black beans are such a great addition to this recipe.

Apart from the health benefits of black beans in this recipe, we all know how delicious cheesy nachos can be. It is often served as a snack but you can also enjoy it as a meal. Whichever way you choose to enjoy it, it will take you just about 30 minutes to prepare this tasty bite.

  • 1 bottle 1 jalapeños, drained

  • 1 packet 1 nacho chips

  • 1 can 1 mixed black beans

  • 1 can 1 sweetcorn, drained

  • 1 1 red pepper, deseeded and finely chopped

  • 1 tablespoon 1 vegetable oil

  • 2 cups 2 grated cheese over the top

  • lashings of sour cream

  • guacamole on the side


  • Heat the oven to 180ºC.
  • Heat the oil in a pan, add the chopped pepper and cook for 2 – 3 minutes until soft.
  • Stir in the beans, sweetcorn and simmer for 3 – 4 minutes.
  • Spread a layer of nacho chips on a baking dish, spoon over some of the sweetcorn and bean mixture, a few hot and tangy jalapeños and add some grated cheese.
  • Repeat for 3 layers. Save some cheese for the top.
  • Bake for 10 minutes until the cheese is melted, golden and bubbling.
  • Serve them up straight from the oven with a big spoon of sour cream and guacamole over top or on the side.
