Gameday in South Africa means that there is almost always biltong on the snack list, so let’s double-up on the goodness. Our cheese and biltong potato fritters with sweet chilli mayo are a combination of great local flavours with biltong, potato fritters and cheese.

About your cheese and biltong potato fritters

When making the mashed potatoes for your fritters, you can use a hand masher for a more rustic texture or a potato ricer. We like using the more rustic style because it goes well with the corn and biltong. Biltong adds that familiar salty South African flavour and adds great depth to the fritters. You can stack them high for a great side dish or serve them one by one as a mid-game snack. To top it all off, cheese just brings everything together. Serve it with a salad and your sweet chilli mayonnaise and enjoy.

Ingredients

  • FRITTERS
  • oil or butter for frying

  • ½ ½ onion, finely chopped

  • 4 4 large potatoes, cooked and mashed

  • 1 tablespoon 1 mustard

  • 1 tin 1 corn kernels

  • ½ cup ½ biltong

  • ½ cup ½ cheddar cheese

  • 1 1 egg, beaten

  • SAUCE
  • ½ cup ½ mayonnaise

  • 1 1 lemon’s zest and juice

  • 1 tablespoon 1 sweet chilli sauce

Method

  • FRITTERS
  • In a saucepan, heat the oil or butter. Fry the onions until soft. Remove from the pan and set aside.
  • In a large mixing bowl, combine the mashed potato, fried onion, mustard, corn, biltong and cheddar. Add the beaten eggs and mix well.
  • Place the mixture in the fridge for 30 minutes to become firm.
  • Shape the fritters into round patties.
  • Heat oil in a frying pan and fry the fritters for 5 minutes on each side.
  • Serve with the mayonnaise sauce and a salad, or as a side dish.
  • SAUCE
  • Combine all the sauce ingredients in a small bowl and serve with the fritters.
