Prep time

  • Chai spice blend
  • 3 tbsp 3 ground cinnamon

  • 1 tbsp 1 ground cardamom

  • 1 tbsp 1 ground ginger

  • ½ tbsp ½ ground allspice

  • ½ tbsp ½ ground cloves

  • ½ tbsp ½ ground nutmeg

  • ½ tbsp ½ ground black pepper

  • For the smoothie
  • 1 1 frozen banana, chopped into slices before freezing

  • 1 1 ripe pear (over ripe is fine too)

  • ice cubes

  • 150 ml 150 plant-based milk

  • 50 g 50 rolled oats

  • 10 g 10 sunflower seeds

  • 50 ml 50 filtered water

  • ½ tsp ½ chai spice blend

  • 15 g 15 nuts (any nut will do but brazil, cashew or almond is really delicious in smoothies)

  • Upgrade your smoothie
  • 1-2 tsp 1-2 cacao nibs

  • 1-2 tsp 1-2 flax seeds or linseeds

  • 1 1 Medjool date (if you have a sweet tooth)

  • Super Smoothie
  • 4-8 tablets 4-8 Sun-Chlorella algae

  • Chai Spice Blend
  • Mix all the spices for the chai blend in a small bowl and stir well, making sure they are really well combined. Chai Spiced Banana and Pear Smoothie
  • These quantities will make enough chai spice blend for multiple smoothies and other recipes, so transfer the chai spice blend into a container. It will keep quite happily for at least a year if the container is airtight and it is always a good idea to store them somewhere dark.
  • Smoothie
  • Place all the ingredients in a food processor or high-speed blender, putting the ice and banana closest to the blades at the bottom so the mixer can work on them first.
  • Blend thoroughly until all the banana and ice have been broken up and you have a thick consistency.
  • Pour into a glass and top with a pinch of the spice mix if you like.
  • To make your smoothie next-level
  • If you like your smoothie to be “next-level”, you can add cacao nibs, flax seeds or linseeds and a Medjool date if you happen to have them knocking about your larder.

  • If you don’t have a pear to prepare the smoothie, don’t worry; it will work without one.
  • If you have Ursula Lake’s recipe book, you can use her homemade almond milk recipe for the plant-based milk ingredient.
