Cauliflower bread sticks: A tasty Valentine’s Day movie snack

Do you have date night planned and cooking at home? Why not make a snack board for movie night? Cooking for your significant other is one of the most romantic things you can do. These cheesy cauliflower bread sticks are very quick to make and will keep you snacking while spending time with your Valentine. Everything is better with cheese, and so we’ve added two of them for layers of flavour with less carbs so that your snacks stay light.

Cauliflower bread sticks suggestions

Cooking with fresh instead of dried herbs ensures that the flavour tastes more fresh too. Both cheese choices don’t overwhelm the spices and are also often used on flat breads and focaccia, so it will work with these snacks. You can make your own or use store-bought marinara sauce for dipping and it’s also great with sweet chilli. This tasty recipe is ready in under 30 minutes and will satisfy your snack needs and make your home smell amazing.

Ingredients

  • 1 head 1 cauliflower

  • 1⁄2 cup 1⁄2 mozzarella cheese shredded

  • 1⁄2 cup 1⁄2 parmesan cheese shaved, plus more for garnish

  • 1 large 1 egg

  • 1⁄2 tbsp 1⁄2 garlic, minced

  • 1⁄2 tbsp 1⁄2 fresh basil chopped, plus more for garnish

  • 1⁄2 tbsp 1⁄2 fresh parsley chopped, plus more for garnish

  • 1 tsp 1 salt

  • 1⁄2 tsp 1⁄2 black pepper

  • 3⁄4 cup 3⁄4 mozzarella cheese shredded

  • marinara sauce for dipping

Method

  • Preheat oven to 180°C and line a baking sheet with parchment paper or a silicone mat.
  • Rice the cauliflower by coring the head and then cutting it into florets. Then place it in the bowl of a food processor and pulse until it is the texture of rice. (If your cauliflower seems excessively moist, squeeze the riced cauliflower in a paper towel to help remove moisture)
  • In a large bowl, mix the riced cauliflower, 1⁄2 cup shredded mozzarella cheese, parmesan cheese, egg, garlic, basil, parsley, salt, and pepper until combined and holds together.
  • Place the cauliflower mixture onto your prepared baking sheet. Spread it out into a rectangle that’s about 22x15cm and 1cm thick.
  • Bake for 10-12 minutes. Remove from oven and top with 34 cup shredded mozzarella cheese and return to oven to continue baking until the cheese is melted and starting to brown.
  • Cool about 10 minutes and cut into ‘bread sticks’. Garnish with fresh herbs and more parmesan cheese.
  • Serve with your favorite  sauce and enjoy!
