Salmon might not be abundant on our shores, but South Africans love seafood and we always find the time for salmon. Salmon is packed with healthy protein and fats, but it also has a light yet distinctive flavour. When it comes to feeding your family, you might want to try our Cape salmon recipe when you want to impress them. It’s a great dish you can enjoy any time of day.

Cape salmon suggestions

Most butchers and fish mongers will fillet your salmon for you, making life much easier. However, you can just buy some of your favourite salmon pieces at your local grocery shop. Salmon is quite distinctive and you don’t want to include too many harsh flavours, The milk poaches the salmon in the oven to a beautiful consistency just like some do with haddock. Serve your salmon with some vegetables and roast potatoes for dinner or with a poached egg and toast for breakfast.

Ingredients

  • 2-4 2-4 Salmon fillets

  • 1 tsp 1 Worcestershire sauce

  • lemon juice

  • 1 litre 1 milk

  • salt and pepper

Method

  • Fillet the salmon and place on a buttered dish and sprinkle with salt and lemon juice.
  • Bake for about 10 minutes in a hot oven. Baste the salmon with an egg beaten with milk, Worcestershire sauce and a pinch of salt.
  • Bake for a further 20 minutes in a 175°C oven till the custard is set.

Notes

  • Finish off with a fresh squeeze of lemon and garnish with herbs.
