Butterscotch scones – Delightful teatime sweet treat

Most of us love a scone at teatime. Have you ever tried butterscotch scones? This decadent treat is flavoured with caramel and topped with a shiny butterscotch glaze. It is simply delightful. Just what you need to snack on during your afternoon tea.

For those of us who have a sweet tooth, these butterscotch scones are simply irresistible. Basically, the scones recipe is very similar to traditional scones. However, you also need to prepare a butterscotch sauce and mix it with the scones dough. That is how the scones get their lovely caramel flavour.

When the scones come out of the oven, allow them to cool down and then dip each one into a butterscotch glaze and allow it to set.

These butterscotch scones will tempt you to come back for second and third helpings. This recipe makes 10 scones so if you have a persistent sweet tooth, maybe double up on this recipe so that you will not be disappointed when it is finished.

Ingredients

  • cups cake flour

  • 2 teaspoons baking powder

  • ½ cup brown sugar

  • 75 g butter

  • 1 cup milk

  • 2 tablespoons lemon juice

  • 1 egg

  • 2 tablespoons butterscotch sauce

  • Butterscotch sauce
  • 1 cup dark brown sugar

  • 30 g butter

  • 1 teaspoon caramel essence

  • cup cream

  • Butterscotch glaze
  • 1 cup icing sugar

  • 3 tablespoons butterscotch sauce

  • ¼ cup hot water

Method

  • Butterscotch sauce
  • In a saucepan, add the butter, sugar and caramel essence and stir over medium heat. Bring the mixture to a boil and stir till the sugar is dissolved.
  • Remove from the heat and slowly stir in the cream till a smooth sauce is formed.
  • Pour into a heat-proof jug and leave to cool.
  • Scones
  • Preheat the oven to 200°C.
  • In a large bowl, sift together the flour and baking powder.
  • Add the brown sugar and combine. 
  • Cut the cold butter into small cubes and use your hands to rub the butter into the flour till a breadcrumb consistency is formed.
  • In a measuring jug, heat the milk in the microwave until just warm and add the lemon juice. Stir until the milk curdles and leave to cool. 
  • Whisk the egg and butterscotch sauce into the milk mixture. 
  • Add the milk mixture to the flour and combine till a soft dough is formed.
  • Flour a flat surface and press the dough into a circular shape that is 2 cm in thickness. 
  • Use a sharp knife to cut the dough into ten even-sized triangular shapes.
  • Place the scones on a tray prepared with baking paper and bake for 15 minutes in a preheated oven.
  • Set aside and leave to cool.
  • Butterscotch glaze
  • Combine all the ingredients in a bowl and mix together until smooth and a bit runny.
  • Dip each scone into the glaze and leave to set.
  • Enjoy warm with a cup of coffee or tea.
